Easiest Ice Cream Cake Ever

Considering the way I love to eat, I can’t believe I don’t write more about food. I’m totally stealing a recipe from a Kraft Foods Magazine and posting it here as my own delectable creation, which it sort of is. It sort of is because I altered theirs to make it easier and gooier. Last Friday it was enjoyed by all of the vultures at my office. And it was a hit.
No long list of ingredients for this one. Just grab 12 ice cream sandwiches, 16oz. of PRE-MADE chocolate pudding from the deli or refrigerator case, 16oz. of Cool Whip, 16 Oreo cookies and a 12″x24″ piece of aluminum foil. That’s it! Like it so far??
Lay out the tin foil and place four ice cream sandwiches on it. Crumble the Oreos and fold them into the pudding. Place a layer of that mixture on top of the ice cream sandwiches. Repeat that whole step. Place the remaining four ice cream sandwiches on top. Cover the entire thing (all four sides and top) with Cool Whip. Wrap the tin foil up around it, forming a “tent” at the top and freeze for at least four hours.
Get it out of the freezer a few minutes before serving it. Slice it and serve. You will be so impressed with yourself when you taste this thing. One lady at my office asked if it was Carvel. That says it all!!
I used to go crazy making this “Mississippi Mud” ice cream cake with tons of ingredients and too much time involved. And it costs $20-$30 to make. Never again, I tell you. This one really takes the cake. Pun intended. Enjoy every bite.
